Sauté: Melt butter in a large pot over medium heat. Add garlic and the scallions. Sauté for 2–3 minutes until fragrant.

Boil: Add cubed potatoes and broth to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for 15–20 minutes or until potatoes are very tender.

Mash: Use a potato masher directly in the pot to crush about half of the potatoes to thicken the soup, leaving some chunks for texture.
