Using Fresco Flavors freeze-dried organic herbs for this recipe to get the nutritional profile of fresh herbs with the convenience of a pantry staple. The freeze-drying process locks in the essential oils, which we will "bloom" using lemon juice and olive oil to elevate a simple roast.

  1. Season: In a small bowl, whisk together oil, lemon juice, minced garlic, salt, and pepper.

  2. Roast: Place chicken on a large baking pan. Brush or toss with the garlic-oil mixture. Roast in a preheated oven at 200°C (400°F) for 30–35 minutes or until the internal temperature reaches 75°C.

  3. Herb Mix: While the chicken roasts, toss the cilantro, parsley, and mint together in a small bowl.

  4. Finish: Immediately after removing the pan from the oven, sprinkle the fresh herb mixture over the hot chicken. The heat will release the oils from the mint and cilantro without cooking the freshness out of them.

  5. Serve: Rest for 5 minutes before serving to allow the juices to redistribute.
